This episode is such a treat because it was recorded in one my high school bestie’s flats in London! I actually connected with Henrietta earlier last year when her book, Clean Cakes was released and she so generously had a copy sent to me in Vancouver. I remember immediately falling in love with the recipes, photos and traditional style of her baking. As I told her in one of my emails, “Seeing some of the words and ideas made me think of my grandma (she was an incredible cook and baker) and how I would spend hours with her in the kitchen in Windsor every summer making delicious sponge among other things.” This is just a trip down memory lane, filled with lots of British memories and beautiful conversations around the pastry world and traditional cooking. Henrietta Inman is a skilled pastry chef and owns her own business, Henrietta Inman, specialising in delicious patisserie made with whole, natural, nourishing real food ingredients. After gaining a distinction in the Professional Patisserie Scholarship at Westminster Kingsway College, she worked in a number of award-winning kitchens including the Michelin-starred Apsley’s formerly at The Lanesborough Hotel. Henrietta grew up in Suffolk, understanding the importance of using local and seasonal ingredients whenever possible in her cooking from a young age. She now lives in London where she takes private commissions and bespoke orders, does baking demonstrations and cookery classes, festivals and events, whilst revisiting Suffolk for classes and demonstrations whenever she can. Her first book, Clean Cakes, Delicious patisserie made with whole, natural and nourishing ingredients and free from gluten, dairy and refined sugar, was published in February 2016 by Jacqui Small. Henrietta follows a simple philosophy when it comes to her real food patisserie, believing all products should have great flavour, great texture and be beautiful to look at too.
